The talented Phoebe from @pheebsfoods on Instagram whipped up this Savoury French Toast recipe using our Gluten Freedom Sweet Potato Sourdough. Delicious served with roasted tomatoes, avocado, fresh rocket, a fried egg and enjoyed any time of day.

Serves 2-3

2 eggs
¼ cup milk of choice
Pinch of salt and pepper
20g grated parmesan cheese
2 tbsp finely chopped chives
Zest of half a lemon
1 tbsp nutritional yeast *optional
Olive oil for cooking
6 slices of Gluten Freedom Sweet Potato Sourdough

1. Whisk all of the ingredients together in a wide bowl, dip the Sweet Potato Sourdough in the egg mixture and set aside
2. Heat a drizzle of olive oil in a non-stick pan over a medium heat
4. Shake off any excess egg mixture from the bread then place into the pan, cook for 2-3 minutes on the first side or until golden then flip and cook for a further 2-3 minutes or until cooked through *if the bread is browning too quickly turn the heat down as you want them to cook the whole way through!
5. Repeat with the remaining bread and egg mixture
6. Serve with you favourite toppings!
